I was wondering what other teachers suggest for teaching a very young beginner, perhaps not even reading yet.

This is a great question for my wife as she is really good with the little ones. Personally I like teaching students from the Suzuki rhythm books out there (for clapping exercises). If the student shows the ability to actually focus, I’ll introduce Essential Elements book 1. I think my wife writes music out, and then focuses more on playing games (or even coloring books) until they show ability to read music. Good question!
